Don't put dairy in the slow cooker until the very end. In the recipes I've seen for crockpot swedish meat, you are to stir 1/2 cup or more of the cooking liquid into the sour cream/softened cream cheese to mix thoroughly, then stir that back into the meatball mixture (after you've completed cooking). You can throw in the frozen meat without thawing, but you'll probably have to adjust the cooking time. Test one at the end of the time on the recipe.
