How to conserve soft and fresh the prepacked sushi?

I don't know who would eat 2-3 day old sushi. Why would you want to follow in a company's footsteps who would allow what is supposed to be a fresh product to sit on the shelves and have the raw fish age over 3 days. Yuck!
