What does the dehydration synthesis have to do with polymerization?

A hydrogen and a hydroxyl are removed as a water (dehydration) in the key reactions during formation of biopolymers. A hydrogen from an amine and a hydroxyl from an acid group are lost as a peptide bond is formed between two amino acids. A hydrogen and a hydroxyl are removed as two simple carbohydrates are linked during formation of a complex carbohydrate.
